À propos du livre
There are no recipes in this book, only photos of some of the pies I have made, and a bit of text. I began making pies many years ago. I don’t remember why – I guess it just seemed like an interesting thing to do. At first I got recipes and guidance from cookbooks. After some years of baking experience, I didn’t often refer to cookbooks. Then, after making pies with conventional lattice upper crusts for several years, I realized it would be more fun to improvise crust designs. At first I was influenced by native America petroglyphs, then other ideas came along. Sometimes I photographed the pies, and some of those are in this little book. Over the years I’ve picked up ideas from cooks on TV and people I’ve met. I no longer pay attention to recipes; the pies usually come out tasting good whether I follow a recipe or improvise.
