These photographs document traditional mezcal production in the Mexican state of Oaxaca. Mezcal, an alcoholic beverage made from the maguey plant , is a cousin of tequila and has a history of use that goes back to pre-Colombian times. The photos document plants varieties in the Oaxacan countryside and provide a view of the elaborate production process of the small producer.
